
INGREDIENTS
- 1 ½ cup raw cashews
- 1 ½ cup raw sliced almonds
- ½ cup fresh lemon juice
- 2 cloves garlic, minced
- ¾ cups water
- 1 teaspoon salt
- 3 tablespoons olive oil
- 1 tablespoon parsley, chopped
PREPARATION
In a medium bowl, cover the 1 cup of raw cashews and 1 cup of almonds with boiling hot water. Let them soak for 5 minutes.
Drain the cashews and almonds and add to a food processor or blender along with the lemon juice, garlic, salt, parsley, and olive oil.
Blend until smooth, 1-2 minutes, scraping down the sides as needed.
Place the mixture in cheesecloth and tie to contain. Place the ball in a strainer over a bowl and leave in the fridge to strain for 4-6 hours or overnight.
When ready to serve, unwrap the cheese ball and roll it gently in a ½ cup of chopped cashews and almonds until coated.
Serve with any of our delicious crackers, we recommend our Original Herb.
