
INGREDIENTS
- 6 large red bell peppers, halved and seeds removed
- 1 pound ground Turkey Sausage
- 1 large yellow onion, diced
- 2 cloves of garlic, minced
- 2 medium zucchini, diced
- 1 (15oz) can tomato sauce
- 1 tablespoon dried oregano
- 2 cups crushed Original Herb Crackers
- Salt and pepper to taste
- 1 cup shredded Monterey Jack Cheese
- 4 tablespoons grated Parmesan cheese
PREPARATION
Preheat the oven to 375.
Heat a large skillet to medium high.
Add the sausage to the heated pan and brown until almost cooked. Add the onion and garlic, cook for 3-4 minutes before adding the zucchini. Add the tomato sauce and season with oregano, salt and pepper; simmer for 2-3 minutes.
Remove from heat and add 1 1/2 cup of cracker crumbs.
Salt and pepper to taste.
Spoon filling into the prepared peppers.
Place peppers cut side-up in a 9″-x-13″ baking dish.
Bake for 30 minutes before adding both cheeses and remaining cracker crumbs to the top of the peppers.
Optional: broil to brown the cheese.
