
INGREDIENTS
- 2 organic mangos, peeled, pitted, and diced
- 2 limes
- 2 nopales, cleaned, diced
- 1 avocado (if nopales aren’t available)
- 1 organic red pepper, diced
- 1 organic green pepper, diced
- 1 organic red onion, diced
- 1 organic jalapeno, diced
- 5 mint leaves, chopped
- 1 tablespoon of extra-virgin olive oil
- Pinch of salt
- Pinch of sugar
PREPARATION
Wear gloves to protect your hands.
Place cactus paddle (nopales) on cutting board and using a sharp knife or vegetable peeler scrape the spines and trim off the edges. The cactus will release a sticky substance.
Wash and dice nopales and cook in salted water for 15 minutes. Drain and rinse.
Place the nopales in a bowl.
Add mango, red and green pepper, jalapeno, onion, mint, lime juice, oil, salt and sugar. Mix all ingredients.
Serve chilled.
