
INGREDIENTS
- 4 large yellow tomatoes, roughly chopped (or a container of golden cherry tomatoes)
- 4 ears of fresh corn, removed from the cob (reserve some for garnish)
- 4 scallions, roughly chopped
- 1 ½ tablespoons sherry vinegar
- 1 tablespoon fresh lemon juice
- 1 clove garlic, roughly chopped
- 1 cup coconut milk
- 1 teaspoon salt
- Pinch of white pepper to taste
PREPARATION
Place all ingredients in a high power blender.
Puree until smooth.
Strain through a sieve.
Chill.
Garnish with additional scallions or cilantro (parsley).
