
INGREDIENTS
- 2 heads of endives, sliced in half lengthwise
- 3 apricots, pitted, diced
- 1 log of goat cheese
- 2 leaves of mint, torn
- 4 tbs of glazed balsamic
PREPARATION
Cut the endives in half and arrange on a plate.
Pit and dice the apricots.
Spread goat cheese in the endive boat.
Sprinkle the apricots into each individual endive boat.
Add torn mint leaves.
Drizzle glazed balsamic.
